What you will need
4 Canon Foods chicken burgers
2 tbsp olive oil for frying
4 Hamburger Buns
Salsa
1 cup pineapple cut into small dice
½ cup corn kernels
1 avocado cut into small dice
½ red pepper into cut small dice
¼ red onion finely diced
1 small bunch coriander leaves roughly chopped
1 lime juiced
Pinch of sea salt
Smokey Jalapeno Mayo
½ cup good quality mayo
1 tbsp chipotle sauce
1 tbsp jalapenos finely chopped
1 tsp maple syrup
Method
Combine all ingredients for the salsa in a medium bowl and set aside.
Combine all the ingredients for the smokey jalapeno mayo in a small bowl and set aside.
Fry the chicken burgers in a large fry pan in olive oil until golden on both sides and thoroughly heated through. Alternatively bake on a lined tray for 10 mins in a hot oven.
Cut hamburger buns in half and grill till golden.
To assemble smear a generous amount of jalapeno mayo onto each bun then top with chicken burger and salsa.
Serve with sweet potato fries dusted in chipotle salt.
