Place the chicken schnitzel onto a large, lined oven tray. Spoon lasagna sauce onto each schnitzel and top with mozzarella. Drizzle with a little olive oil and season with sea flakes. Bake for 15 mins until the cheese is melted and chicken is heated thoroughly.
Transfer onto plates and serve with rocket leaves, green beans, and a slice of lemon. Garnish with basil leaves and parmesan.
